Michelle Diminich: owner and pastry chef

Michelle received her degree in Baking and Pastry and subsequent BS in Hospitality Management from Johnson & Wales University in Charleston, SC, in 2003.  While studying, she completed an internship at Peninsula Grill and continued as a pastry cook after graduation.  Michelle then transitioned to the position of Executive Pastry Chef at McCrady’s Restaurant.  During her 3 years at McCrady’s, Michelle helped the restaurant earn the AAA Four Diamond Award, the DiRoNA Award of Excellence, and Wine Spectator’s “Best Of”.  Wanting to get experience in a retail bakery, Michelle left the restaurant business and managed Earth Fare’s bakery for over 2 years. She founded Dolce in 2008 and worked in the Normandy Farm Bakery kitchen for 5 years providing desserts to Normandy and other area restaurants and coffee shops. Dolce also created custom cakes and desserts for many of Charleston's brides and clients looking for quality, one of a kind baked goods. Michelle started teaching for The Art Institute in 2013 and then The Culinary Institute of Charleston in 2015. She took a hiatus from Dolce and concentrated on developing her skills as a chef instructor and caring for her young son. After a few years of rest and renewal, she is ready to begin a new chapter of Dolce.  The vision for Dolce is to provide made-to-order desserts for the food-centric community of Charleston - a community that has proven to expect high quality, unique options when planning events. Whether a bride is looking for the perfect cake, a doctor's office wants specialty baked goods to gift referrals, or a family needs a dozen cookies to take to a cookie swap, Dolce 's desserts will provide just the right addition to the next special event. 

Michelle is currently the president of the Charleston chapter of the American Culinary Federation and a member of the Charleston chapter of the Les Dames D'Escoffier. Michelle is also a Certified Executive Pastry Chef with the ACF. 

Michelle is a Servsafe Manager Instructor and Proctor who teaches Instructor Led Training Courses at Code One Solutions.  She is also currently teaching continuing education classes for both adults and children at Trident Technical College.
